Tomato Bacon Pasta

This is our absolute favorite meal in the summer.  I should thank my friend Emily for introducing us to delicious dish, Thanks Emily!  Summer is the season for tomatoes and this recipe is one sure way to get your Lycopene!

3 tbsp. olive oil                        
2 medium to large onions, chopped   
3 cloves garlic, crushed      
5 lg tomatoes (about 3 lbs) peeled, seeded, & chopped
1/2 lb linguine, cooked & drained
2 tsp. salt
1tbsp. Italian seasoning
1/2 lb bacon
¼ tsp. red pepper flakes
4 tbsp. finely chopped parsley

Fry the bacon until crisp: drain on paper towels ans set aside. Pour out all of the fat,except for 1 tablespoon. Add the olive oil to this and when hot, add the onions. Saute for 5 min. Add the garlic and tomatoes. Simmer for a few minutes. Then add the salt,italian seasoning and pepper. Simmer for 1/2 hour stirring occasionally. Add the parsley. Simmer for 5 minutes. Crumble the bacon and stir it in.  To serve, top paste with sauce and grated parmesean cheese.

To peel tomatoes dip briefly in boiling water and cool in ice water. Peels will slip off.

I tried to be all fancy with this one. Ha.

  2. Is this what you cooked us when we came to hburg? If so-- it was SOOO good!! I've tried to recreate- but it wasn't as wonderful as yours. Maybe it was the wine I was lacking :)
